White wine from overripe grapes
PRODUCTION ZONE: hills in the municipal area of Aldeno and Nomi (TN).
GRAPEVINE VARIETIES: Chardonnay, Sauvignon Blanc, Muller Thurgau, Moscato e
Traminer Aromatico.
TYPE OF SOIL: calcareous and slime-sandy gravel of morainic origin.
VINEYARD SYSTEM: typical Trentino's simple pergola and Guyot.
SPECIAL RULES: integrated viticulture according to the agreement with the
Trentino's office record.
WINTER PRUNING: very pure with 25 gems per block.
GREEN PRUNING: 3 during the actual season.
PRUNING: 4 concentrated in summer time and one before harvesting, only
selecting the loose clusters coming from the raisinig in vineyards.
HECTARE PRODUCTIVITY: 80hl.
GRAPE HARVEST: In November in the "San Martino's summer".
WINEMAKING: soft pressing and praise most fermentation at controlled
temperatures of 20°C.
FERMENTATION: In steel INOX tanks for 5 months and 24 months in bottle.
BOTTLING: Following Spring after grape harvest.
DESCRIPTION: Yellow gold color, it is a gentle fragrance, aromatic and
intriguing ripening of yellow fruits such as apricot, honey, tropical fruits
and figs. The taste is nicely fresh, tender and delicate.
SERVING TEMPERATURE: 12°C
FOOD MATCH: Typical wine for meditation, it tastes well with typical sweet
confectionery of the tradition in Trentino such as fregoloti cake, almonds
cookies and the basini de Trent. Particularly the combination with short
aged cheeses such a caprini and herbs cheese and honey.
DURATION: 5 years of bottling.
