PRODUCTION ZONE: owns of Carestel e Fornas, municipality of Nomi
(TN).
GRAPEVINE VARIETIES: 50% Trentino Merlot, 25% Trentino Cabernet Franc
and 25% Trentino Cabernet Sauvignon.
TYPE OF SOIL: Medium, rich of skeleton.
VINEYARD SYSTEM: Typical Trentino's simple pergola for 4.000 vines
per hectare.
SPECIAL RULES: Integrated viticulture according to the agreement with
the Trentino's office record.
WINTER PRUNING: very pure with 25 gems per block.
GREEN PRUNING: 3 during the actual season.
PRUNING: 4 concentrated in summer time and one before harvesting.
HECTARE PRODUCTIVITY: 60hl.
GRAPE HARVEST: second 10 days in October, entirely manual, of grapes
coming exclusively from our vineyards.
WINEMAKING: Soft pressing and most fermentation in contact for 15
days with peels at temperatures of 30°C with frequent grape pressing.
FERMENTATION: In French oak barrique for 24 months and 12 months in
bottle.
BOTTLING: Following spring after grape harvest.
DESCRIPTION: Strong ruby red color.
Wide and rich sense of smell, it comes with a strong intensity of ripening
fruity blends and of small wood fruits at the bottom with vanilla and spices.
Testing is soft and velvety, while ageing it becomes exceptionally excellent.
SERVING TEMPERATURE: 18°C
FOOD MATCH: Braised beef and game, grilled meat and aged cheeses, as
well as to sip it while chatting.
DURATION: Exquisite wine to lay down.
