GRAPEVINE VARIETIES: Trentino Merlot, medium grape, pyramidal, winged,
medium-compact, blue-dark grape, pruinous Clone R12- 18.
TYPE OF SOIL: Medium, structured and deep.
VINEYARD SYSTEM: Typical Trentino's simple pergola for 4.000 vines per
hectare.
SPECIAL RULES: Integrated viticulture according to the agreement with the
Trentino's office record.
WINTER PRUNING: very pure with 30 gems per block.
PRUNING: 2 concentrated in summer time and one before harvesting.
HECTARE PRODUCTIVITY: 80hl.
GRAPE HARVEST: First 10 days in October, entirely manual, of grapes coming
exclusively from our vineyards.
WINEMAKING: Soft pressing and most fermentation in contact for 15 days with
peels at temperatures of 30°C with frequent grape pressing, through the cap
submerged into the fermentation tank.
FERMENTATION: Permanency in 16-hl oak barrels for around 6 months.
BOTTLING: Following summer after grape harvest.
DESCRIPTION: Intense ruby red color. Very strong fruity, wine fragrance with
taste of red fruit, morello cherry and spices jam. Dry, full, savoury,
balanced and harmonic taste.
SERVING TEMPERATURE: 18°C
FOOD MATCH: It comes well with dry soups, meat dressings, vegetable soups,
white and red tasty meats, mild aged cheeses.
DURATION: Exquisite wine to lay down.
