PRODUCTION ZONE: the town of Bogonzòl pp.ff. 117/1, 117/3 e 116 the
municipal area of Nomi (TN)
GRAPEVINE VARIETIES: 70% Trentino Chardonnay and 30% Trentino Pinot
Nero.
TYPE OF SOIL: calcareous.
VINEYARD SYSTEM: typical Trentino's simple pergola and Guyot.
SPECIAL RULES: integrated viticulture according to the agreement with
the Trentino's office record.
WINTER PRUNING: very pure with 25 gems per block.
GREEN PRUNING: 3 during the actual season.
PRUNING: 4 concentrated in summer time and one before harvesting.
HECTARE PRODUCTIVITY: 80hl.
GRAPE HARVEST: first 10 days in September,entirely manual, grapes
coming exclusively from our vineyards.
WINEMAKING: soft pressing and praise most fermentation at controlled
temperatures of 20°C.
FERMENTATION: Classic Method with permanency of selected yeasts for
72 months.
DISGORGEMENT: After a 40-day remuage, the bottle is discorged and
must rest for around 1 month before consumption.
DESCRIPTION: Straw gold sparkling yellow colour. A fine and very
persisting Perlage. Thanks to its long and skillful ageing, the flavours are
very intense and complex of aged apples and crust of bread.
SERVING TEMPERATURE: 7°C
FOOD MATCH: The taste is hit by the softness and creaminess of its
bubbles from Trentino.Insuperable as aperitif, it combines a superb
combination with other type of foods.
DURATION: 3 years of bottling.
